CAULIFLOWER BASE PIZZA

BASE INGREDIENTS
400g of Chopped Cauliflower heads
2 Whole Eggs
1/2 Cup of grated cheese
Pinch of parsley
Pinch of oregano
REMAINING INGREDIENTS
1/2 Cup of pasta sauce
1/2 Cup of grated cheese
TOPPING OPTIONS
1 Chicken breast diced
Handful of spinach
Small amount of pickled Gherkins
30g of diced onion
TOPPINGS ARE DOWN TO PERSONAL PREFERENCE.
COOKING INSTRUCTIONS
1) Pre heat oven to 175°c for fan oven or 190° non fan oven.
2) Chop 400g of cauliflower heads (avoid stems), put in blender or food processor and dice up until it resembles a rice consistency.
3) Empty cauliflower rice on to a tea towel and wring out remaining water in cauliflower, once completely wrung out place cauliflower in a mixing bowl.
4) Add eggs, 1/2 cup of cheese, parsley and oregano and mix together thoroughly, spread this mix on a pizza tray in to preferred shape and evenly spread.
5) Place base mix into oven for 15-20mins look for golden brown colour all over.
6) Once base is cooked take it out and spread pasta sauce evenly over oven base, add 1/2 cup of cheese and any other topping of your choosing, place back in oven for 5-10mins keeping a close eye on it as it will cook toppings very quickly.
7) Use a sharp knife or pizza cutter to slice and enjoy!
